For generations, human activity has peacefully co-existed with the conservation of the environment in the wooded pastures of the dehesa system. The importance of this unique ecosystem comes mainly from the multiple and sustainable use of the resources, goods and services that society offers.
The traditional exploitation of the Iberian pig is based on the use of the already existing natural resources around the wooded pastures where availability of food sources is varied throughout the year. The period in which there is the most abundance of food is during the Fall and Winter seasons. During this period, if it is a good year, the animals take advantage of the mast-feeding season; in conjunction with the pastures’ natural resources : grasses, aromatic plants, grains and, mainly, acorns, which are eaten directly by the animals while they are grazing.
Organic livestock production assures the animal’s maximum well-being in its environment. The organic Iberian pig feeds in pastures whose grass and natural vegetation are not polluted by toxic residues from pesticides or herbicides and, in the event that they receive additional feedings, this food must be certified and authorized for use in ecologically friendly production.
Free-range pigs eat acorns, grass and aromatic herbs in the pasture until they have had their fill. The physical activity that the pig does in search of food, slows the fattening of the animals and causes that the fat to further intersperse in the meat, thus obtaining more tender meat with exceptional flavor.
Organic Iberian pig production is thus shown to be the most adequate. In addition to the care that feeding requires and the life in the pasture, the guarantee of good agrarian practices provides added value to this exclusive product..
